Simple ricotta cheese frozen dessert

This post is about simple ricotta cheese frozen dessert. This dessert is something like frozen yoghurt.  

One day ricotta cheese was on sale, so I bought it and forgot. Later I realized that the expiration date was imminent and I had to use it quickly.  Then came up this dessert.  I thought of something that could easily be made with what I had at home instead of elaborate things.  I always have some fresh cream in my fridge and I sometimes decorate cakes with the cream made of whipped cream and ricotta or mascarpone cheese.  Then I recalled ice-cream cake.  At that day I had some colorful candied cherries and lemons in my cupboard.  Hence I combined it all and put it in the freezer overnight.  

Next day I served this as our dessert.  My family reaction was quite good.  I served with raspberry sauce, but they preferred to eat without the sauce.  I understand the reason why without sauce; simply the ricotta cheese taste is so milky and delicious.

Have you ever tasted ricotta cheese?  I love ricotta cheese.  Sometimes I eat it just as it is. It has a creamy milky taste and light flavor.  Ricotta is a fresh Italian cheese made from whey (the residue left over from other cheeses).  Ricotta is low in fat and high in protein.  So ricotta is a dream cheese for someone on a diet.  Since ricotta cheese is versatile, you can use it not only for dessert or sweets, but also for savory, pasta and many more.  The link below gives you all the information about ricotta cheese.

This is one of the easiest desserts and you can make it in advance.

Equipment

  • hand mixer
  • Pound cake form or log cake form

Ingredients

  • 250 – 300 gram Ricotta Cheese (I use Galbani ricotta, as this has smooth texture)
  • 100 – 130 gram Sugar
  • 200 – 250 ml Fresh cream
  • 1/2 Lemon. (grate the zest and squeese the juice)
  • 100 gram Candied cherries

Instructions

  • To make whipped cream : pour the fresh cream and sugar (about 30g) in a bowl and beat the mixture with hand mixer until stiff peaks form.
  • Put the ricotta cheese and the rest of the sugar (about 100g) in and mix well with a whisk.  Add lemon zest and juice to the ricotta cheese mixture and mix well.
  • Add chopped candied cherries to ricotta cheese mixture and mix. 
  • Add half of whipped cream to the ricotta cheese mixture and mix with a whisk, then add the rest of whipped cream and fold gently until incorporated.
  • Line the form with cling film and pour the mixture into the form and smooth the surface.  Cover the surface with another cling film and place it in the freezer overnight.
  • To serve, remove the ricotta dessert from the freezer 15 minutes before serving to soften, otherwise it is hard to take it out from the mold. Remove the cling film on the surface and invert onto plate.  Peel off the cling film. Slice with a hot knife and serve.

Notes

It will be no problem even if the amount of ingredients changes slightly.   That’s why the amount of the ingredients are given some range, such as 250 – 300g.

I think this is one of the easiest desserts and you can make it in advance.  Hence it is suitable for a dinner with your friends and family.  

You can serve this dessert with fruits sauce and/or fruits, if you like.  Also a little sprig of mint will make it look nicer. 

For the recipe I added candied cherries, but you can replace these with some fruits or nuts. Moreover you can add fruits puree instead of lemon for another flavor.  Check what you have in your fridge, freezer and cupboard; improvise and create your own frozen dessert.
