Daifuku Mochi

Daifuku mochi is a type of Japanese sweets made by wrapping sweet bean paste with mochi. You can make mochi in a microvate oven and If you have sweet bean paste, you can make daifuku easily.

Equipment

  • 1 microwave safe bowl

Ingredients

  • 100 gram Glutinous rice flour
  • 100 gram Fine granulated sugar
  • 200 - 215 ml Water
  • 300 gram Sweet bean paste
  • appropriate amount Corn starch

Instructions

  • Divide the sweet bean paste into 25 grams and roll it into a ball.
  • Put glutinous rice flour, sugar and water in a microwave safe bowl and mix well. 
  • Then cover with plastic wrap and heat it in the microwave in several batches. Each time heat in the microwave (600w) for 1 minute, and mix .
  • Repeat this until it becomes translucent and elastic.
  • Sprinkle cornstarch on a large plate. Pour the mochi on the plate.  Sprinkle the cornstarch on top and spread it a little flat by hand. Then divide the mochi into 12 equal parts. 
  • Spread the mochi a little, put the sweet bean paste balls on it. 
  • Wrap it with mochi. Stretch the mochi along the sweet bean paste, pinch the mochi with your fingers and close it tightly. 
  • Then turn it over and shape it into a round shape. Brush off excess cornstarch.

Notes

if you want to change the flavor of mochi, add flavor ingredients such as matcha to glutinous rice flour, sugar, and water, and heat it in the microwave.
