Easy Salt Butter Chicken

Family recipe – easy salt butter chicken

This time is one of our family recipes “easy salt butter chicken”.  I have cooked this dish many times and still I make it regularly.  I found this recipe in an old cookery book from Japan.  It is easy to make and delicious with salt butter sauce.  I think salt butter taste is the taste that everyone likes.  Further the chicken is marinated with soy sauce before frying in the pan and soy sauce gives some depth to the taste. Moreover the cooking process is quite simple : marinating chicken, frying chicken, seasoning and simmering.

Which part of chicken?

Earlier I used to use chicken drumsticks for this dish. But nowadays I use boneless chicken thighs instead, since these become widely available at supermarket.  Chicken thighs have more intense flavor and contain more fat than chicken breasts.  The fat gives most of the flavor.  If you like lighter taste or if you are on a diet, of course you can use chicken breast or mix both thighs and breasts as well. 

Serving idea

I usually add garlic to this dish, however, you can omit it if you don’t like it or don’t have the garlic in your cupboard.  Also I use chopped chives as a garnish.  You can use parsley or other herbs as well.  Adding a little green color to the plate will make it look better.   I mostly have some chives and mint in my kitchen.  I use mint for fruit marinades or as a dessert garnish.  The small garnish makes a big difference for the appearance. Ingredients

  • 800 grams Boneless chicken thighs or 1 kg chicken drumsticks
  • 1.5 tablespoon Soy sauce
  • 1 to 2 tablespoon Oil
  • 1 teaspoon Salt
  • 4 tablespoon Japanese sake or Chinese rice wine or sherry
  • 40 grams Butter
  • 2 to 3 cloves Garlic (optional). Crushed or finely chopped
  • Black pepper
  • 200 ml Water
  • 1 tablespoon Corn starch (optional)
  • 1 tablespoon Water (optional)
  • Chives

Instructions

  • Cut chicken thighs into large pieces.   Put chicken and soy sauce in a bowl and mix well and set aside for 10 – 15 minutes.
  • Heat oil in a frying pan over medium-high heat. Once the frying pan is hot, place the chicken in the pan, cook a couple of minutes on each side or until brown on both sides.
  • Add Japanese sake, salt, garlic, butter, black pepper and water to the frying pan.  
  • Bring to a boil, cover the frying pan with the lid and reduce the heat to medium-low and simmer for 30 minutes or chicken is cooked through and the sauce is slightly thickened. 
  • Check the taste and if necessary, season with additional salt and pepper.  If you like, you can add corn starch resolved with water to thicken the sauce.  Garnish with chopped chives.
