“Stir-fried pork and tomatoes” is a quick and easy stir-fry, seasoned with garlic and mayonnaise. The mayonnaise gives it a rich and creamy flavor that goes well with the garlic.

And the sweet and sour cherry tomatoes provide a fresh taste that contrasts with the richness of the mayonnaise.

It’s perfect for when you’re busy because it’s just stir-frying.  It goes well with bread, so I often make it when I bake focaccia bread at home. It also goes great with a salad of fresh vegetables. When sprinkled with parsley, it looks beautiful with green, red, and cream colors.  It’s a very convenient dish, so please try making it once.

Recipe tips

Regarding pork, thinly sliced ​​pork is best as you can cook it quickly. If you can’t get it, just cut it into bite-sized pieces and use it. I use pork sliced about 5mm thick, then cut into bite-sized pieces.

If the mayonnaise is suddenly heated to high temperatures when frying meat, it will tend to separate.  Therefore, put it in a cold frying pan and slowly cook it together with the pork.

Use cherry tomatoes that are red, ripe, and sweet. Add the cherry tomatoes after the meat is cooked and stir-fry for a few minutes. You can stir-fry them quickly to keep a fresh taste or stir-fry them a little longer to soften them. I prefer to fry it a little longer. When you do this, the cherry tomatoes will release juice and the sauce will turn orange, which is also delicious. Adjust as you like.

Also, don’t forget to chop some parsley or chives and sprinkle on top. It will look and taste better.

Equipment

  • 1 Frying pan

Ingredients

  • 300~350 gram Sliced pork (cut into bite-sized pieces)
  • 300 gram Cherry tomatoes (cut in half)
  • 4 tablespoon Mayonnaise
  • 1 teaspoon Garlic (finely grated or chopped)
  • an appropriate amount of Salt & pepper
  • 1 tablespoon Chopped parsley or chive

Instructions

  • Remove the stems from the cherry tomatoes and cut them in half. 
  • Cut the pork into bite-sized pieces, sprinkle with salt and a little pepper, and mix to taste.
  • Add mayonnaise, garlic, and pork to a cold frying pan. 
  • Heat over medium heat and stir-fry for about 3-4 minutes until the meat is cooked through.  (The time will vary depending on the size of the meat.)
  • Add the cherry tomatoes and fry for another 2 ~3 minutes.  (You can stir-fry them quickly to keep a fresh taste or stir-fry them a little longer to soften them.)
    Place on a plate and sprinkle with finely chopped parsley and chives.

Notes

Note : Cooking time will vary depending on the thickness and size of the meat and how well-cooked the tomatoes are.
