About easy pan-fried noodles

Easy pan-fried noodles are stir-fried Chinese noodles, meat, and vegetables seasoned with oyster sauce and soy sauce.  When I was in Japan, I mostly ate yakisoba (fried noodles in Japanese) seasoned with a sauce like Worcestershire sauce.  I tried making it with Worcestershire sauce and tonkatsu sauce as well, but for some reason it didn’t taste the same. Basically, you can season pan-fried noodles in many ways. Then I tried many and the seasoning of this recipe was well received by my family, so I will share it with you.

The good thing about pan-fried noodles is that it’s quick and easy to make.  And you can make it with whatever ingredients you have on hand.  At home, we make it with lots of vegetables. The meat also changes from time to time, such as minced meat, pork, beef and chicken. Sometimes I make it with just only vegetables.

Dried and fresh Chinese noodles

As for noodles, you can find a variety of Chinese noodles in supermarkets.  There are various thicknesses, and some are steamed and some are fresh. You can use any of them, so it’s a good idea to experiment and find what you like.  Dried noodles are convenient because you can store them for a long time. I often use fresh noodles these days. They are thick and chewy, so it’s filling.  Anyway, please prepare according to the instructions written on the package. Moreover, since some noodles tend to stick together, it’s easier to stir-fry if you sprinkle a little vegetable oil and coating the noodles with oil after cooking.

You can use the vegetables you have in the refrigerator, or you can buy the vegetables bag for stir-fry at the supermarket. I always use green onions. In that case, add the green onions last so that the color will be beautiful.

It’s delicious with or without meat. If you have other meat dishes, it’s good to make it with vegetables only.

Seasoned with oyster sauce, soy sauce, and sake, but adding a little curry powder is also delicious. Try it out if you like.

Equipment

  • 1 Frying pan

Ingredients

  • 400~500 gram Cooked noodles Prepare the noodles according to the instructions on the package.
  • 200~250 gram Meat of your choice (cut into bite-sized pieces)
  • 350~400 gram Vegetables of your choice (cut into easy-to-eat-pieces)
  • 1 tablespoon Vegetable oil
  • 4 tablespoon Oyster sauce
  • 2 tablespoon Japanese soy sauce
  • 2 tablespoon Japanese sake or Chinese rice wine
  • ** 1~2 teaspoon Curry powder (optional)

Instructions

  • Cut the vegetables into easy-to-eat pieces. If you use meat other than minced meat, cut it into bite-sized pieces.
  • Prepare the noodles according to the instructions on the package.  If the noodles tend to stick together, add a small amount of vegetable oil (not listed) to coat the noodles with oil.
  • Add oil to a frying pan and heat over medium heat to fry the minced meat.
  • When the meat turns brown, add the vegetables. Fry until tender.  (If using green onions, set them aside as they will be added later.)
  • Add the noodles and stir-fry until the noodles are mixed with the meat and vegetables.
    Add the seasonings (oyster sauce, soy sauce, Japanese sake, curry powder if you like) and stir-fry until seasonings are evenly distributed. Check the taste here.   Add seasoning if necessary.
  • Finally, add the green onions and stir-fry briefly.

Notes

The amount of vegetables and meat is approximate, so adjust the seasoning after checking the taste.
