Asian spicy chicken with cucumber is a very easy, quick and delicious dish. It’s a simple dish of pan-fried chicken mixed with spicy garlic and red chili pepper sauce on top of sliced cucumber. The spicy sauce is appetizing and you can eat plenty of vegetables.
I make it when I don’t have time or when I don’t want to cook. As it’s spicy and light, it’s perfect for hot summers. I also like the fact that there are few ingredients and they are inexpensive. Chicken and cucumber are main ingredients, but adding tomatoes or lettuce will make the colors brighter, which is good. It’s simple, fast, inexpensive and delicious, so there’s no reason not to make it.
How to make
Cucumber
Cut the cucumber into thin slices. If a lot of water comes out, wipe it off with a paper towel and spread it over the plate. If you use tomatoes or lettuce, cut them into pieces that are easy to eat and arrange them on a plate. I think cucumber is one of the foods that you often eat. Chicken
Sprinkle salt and pepper on both sides of the meat. Heat the oil in a frying pan, brown both sides over medium heat, cover and cook.
Spicy sauce
Make the sauce while frying the chicken. Put the ingredients (Chinese chicken soup powder, hot water, soy sauce, doubanjiang, sesame oil, garlic, red pepper) in a bowl and mix well. As for Chinese chicken soup powder, I usually use Knorr chicken powder, but if you use other products, please adjust the amount according to the taste.
Finishing the dish
Cut chicken into bite-sized pieces and put them in a bowl of sauce and mix. Place the chicken pieces on the cucumber and sprinkle the remaining sauce. Eat while mixing the whole.

Ingredients
- 600 gram Boneless, skinless chicken thight (cut into large pieces)
- a pinch of Salt & pepper
- 1 tablespoon Vegetable oil
- 500 gram Cucumber
- 5~6 Cherry tomatoes (optional)
- 1.5 teaspoon Chinese chicken powder
- 2 tablespoon Hot water to dissolve chinise chicken powder
- 2.5~3 tablespoon Japanese soy sauce
- 1 teaspoon Doubanjian (Chinese bean chili paste) or other chili paste
- 1 teaspoon Finely chopped garlic
- 1 Fresh red chili pepper (remove seeds, cut into thin strips)
- ½ tablespoon Sesame oil
Instructions
- Cut the cucumber into thin slices. If a lot of water comes out, wipe it off with a paper towel.
- Spread sliced cucumber over the plate. If you use tomatoes, cut them into pieces and arrange them on a plate.
- Sprinkle salt and pepper on both sides of the chicken. Heat the oil in a frying pan, brown both sides on medium heat, cover and cook for 6-10 minutes. Cut the thick part and check if it is cooked. If it is not cooked through, cook for another 3-5 minutes.
- While frying chicken, make the sauce. First put the Chinese chicken powder and hot water in a bowl and mix well to dissolve the powder. Then add the rest of the ingredients (soy sauce, Doubanjiang, sesame oil, garlic, red chili pepper) and mix well.
- Cut chicken into bite-sized pieces and put them in sauce, and mix well with sauce. Place the chicken pieces on the cucumber and sprinkle the remaining sauce. Eat while mixing the whole.
