Old Japanese cook book

Until recent I didn’t know much about Russian crepes. One day I was organizing my bookshelves and found a very old cookbook.  It was published by a Japanese dairy products maker with a publication date of over 40 years ago.  I think my mother gave it to me. When turning the page, there was a blini – Russian crepe with yeast recipe.  A crepe recipe using yeast is not common, and the recipe said to make meringue using one egg white and mix the meringue in the end.  So I thought it was a interesting recipe and I wanted to make it.

My first impression of blinis

Making blini is not difficult, the method is just mixing ingredients.  But you need to have about one hour of leavening time. Hence I recommend making it when you have enough time.  

The taste was great.  I ate it with lemon juice and powder sugar, and with homemade jam.The texture was light, soft and slightly chewy. I don’t know if adding meringue to the batter is normal, but it helps to create light texture. Moreover it seems the yeast gives a wonderful aroma like a fresh bread to blini. I love it. 

In conclusion I would like to say that it is worth making it.  As I like it so much, I made blinis 3 time a week for my family after discovering this recipe.

Blini – Russian crepe recipe

Blini is a Russian crepe using yeast. Easy to make and the taste is great. The texture is light, soft and slightly chewy. Yeast gives a wonderful aroma to blini.

Equipment

  • 2 bowls
  • Frying pan

Ingredients

  • 3 Egg (at room temperature)
  • 60 gram Sugar
  • 575 ml Milk
  • 1/2 teaspoon Dry yeast
  • 1 pinch Salt
  • 250 gram Flour
  • 30 gram Melted butter
  • Butter / Oil for cooking blini

Instructions

  • If milk (575 ml) is cold, warm it up slightly (not too warm, up to 35 celcius = 95 fahrenheit). Add ½ teaspoon yeast to milk and mix.  Leave for 10 – 15 minutes.
  • Put 2 whole eggs and 1 egg yolk in a bowl. ( Reserve one egg white for meringue). Add sugar to eggs and mix well.  
  • Add salt, flour and pour milk and yeast mixture little by little and mix to prevent lumps.Add melted butter and mix.  Cover with cling film and leave the batter for about an hour at a warm place in the house.
  • Just before baking the batter in a frying pan, put reserved egg white in a clean bowl and whisk until firm meringue is formed.  Add the meringue to the batter in 2 potions and fold gently.
  • Preheat a frying pan over medium heat and when the pan is hot, grease the bottom of the frying pan with oil and butter. (or you can use only butter or oil).
  • Using ladle pour the batter into the frying pan and rotate the pan to spread the batter throughout the bottom of the pan.
  • When the edge of blini becomes brown, flip the blini using spatula and cook the other side for a couple of minutes. 
  • Transfer the blini to a plate.  Continue cooking the blinis in the same way until all batter is used up.

Notes

If there is any leftover, cool them to room temperature, cover with cling film and keep in the fridge. Eat them following day.

If you add less sugar to the batter, you can eat with savory toppings, such as smoked salmon with sour cream and a little dill.  It is also delicious.
