As the name implies, crustless ham and spinach quiche is a quiche with only filling. 

The quiche has a gentle taste with eggs, milk and fresh cream.  It is very easy to make because you just boil the spinach, cut the ham, mix the ingredients and bake. Besides, you can cook other dishes while baking in the oven, which is convenient when you want to have another dish.

Making crust dough is a hassle for many people including me, but you can make quiche without dough.  Certainly the quiche with the crust is delicious.  However, I started to make quiche without pastry, and I find it equally tasty and the number of times I make it has increased.

Also, the dough contains quite a lot of butter / fat, so it’s quite high in calories. Therefore, for those who are careful about their weight, crustless quiche may be suitable. This time it’s a quiche without crust, but if you like to know more about quiche, click the link below.

Recipe tips

Basically, you just mix and bake, but problems such as not setting well may occur. The following are general rules, not limited to this ham and spinach quiche.

There is no problem to make it with only milk (full fat milk), but soy milk and skim milk are low in fat and high in water, which can cause the quiche to not set.

The egg to cream / milk ratio should be correct, but it won’t harden? In that case, water may come out from the ingredients.  For example, spinach, tomato and mushrooms, which are often used in quiche, release quite a lot of water when cooked. Hence cook vegetables and meat and drain any excess water before mixing to minimize the amount of water that comes out.  

Be sure to preheat the oven and bake well to the center.  After baking, check with a bamboo skewer. If there is egg liquid on the bamboo skewer, it is insufficiently heated, so heat it again. The quiche that has just been taken out of the oven is still soft. If you leave it for 10 ~ 15 minutes, you can cut it cleanly.

Equipment

  • 20 cm diameter over dish & a bowl

Ingredients

  • 3 tablespoon All purpose flour
  • 100 ml Milk
  • 100 ml Fresh cream
  • 3 Eggs
  • 80 gram Cheese (shredded)
  • 1/2 teaspoon Salt
  • a pinch of Black pepper (ground)
  • 150 gram Ham (cut into bite-size pieces)
  • 300 gram Fresh spinach If spinach is boiled and drained well – 150 gram
  • Appropriate amount of Butter and flour for oven dish

Instructions

  • Preparation : wash the spinach and drain the water. Boil plenty of hot water and put spinach in boiling water, submerge the spinach and cook for about 1 minute. Immediately soak in cold water after boiling. When it cools, transfer it to a cutting board and cut it into 2~3 cm width. Then squeeze the spinach to drain excess water and set aside. 
  • Preheat oven to 180C = 356F degree.  Spread a generous amount of butter on the oven dish and sprinkle it with a thin layer of flour.
  •  Put flour in a bowl, add half the amount of milk and mix well with a whisk. Add eggs and mix.  Add the rest of the milk and fresh cream and mix well.
  • Add shredded cheese (50g) and mix.  Pour egg cheese mixture into prepared oven dish.Spread ham and cheese evenly over the batter.  
  • Sprinkle the rest of the cheese (30g). Bake in a 180C= 356F degree oven for about 40 minutes. Check with skewers. If the skewer comes out clean, it is done. Remove from oven and transfer to wire rack. Leave for 10 ~ 15 minutes, then serve.

Notes

I used ham and spinach this time, but you can also use your favorite ingredients such as seasonal vegetables and bacon.
The oven plate is sprinkled with butter and flour, so it can be come off easily. It’s nice to put it on a plate and cut it.
