It’s getting cold, so it’s time for goulash soup with minced beef.  Goulash is a Hungarian origin soup / stew made from beef and vegetables seasoned with paprika powder. In my version, I use minced beef to make it easy and quick, and I also add a lot of vegetables to make a hearty soup.  I often make it during a busy week and eat it with freshly baked bread.  It is delicious even if you make a lot and reheat it the next day.

Recipe tips

It’s a simple recipe, but here are some points and ideas.

  1. It depends on your preference, but when you fry the minced meat, leaving some lumps will make it more satisfying to eat.

2. I use creamy Greek yogurt and chopped celery leaves as a topping for the soup. You can replace the yogurt with sour cream or fresh cream if you like. Since I use celery for the soup, I use beautiful green leaves for garnish, but parsley and chives are also nice.

3. I haven’t added it, but it’s also delicious to add potatoes and carrots.

4. I use smoked paprika powder, but you can use regular paprika powder instead, if you can’t find it.

5. The recipe uses a commercially available beef bouillon tablet so that it can be made quickly. The amount used depends on the product, so follow the amount indicated on the package. First, reduce usage and add more if not enough.

6. I use tomato paste (50g) as well as canned tomatoes to add depth to the taste.  If you don’t have tomato paste, you can substitute it with tomato puree (100 – 150 g) or tomato sauce.

Ingredients

  • 1 Onion (about 200g – chopped coarsely)
  • 2 cloves Garlic (finely chopped)
  • 15 gram Butter or oil
  • 300 gram Minced beef
  • 3 Paprika (stem and seeds removed, cut into short strips) if possible 3 different colours
  • 100 gram Celery (sliced to a thickness of 7-8 mm)
  • 50 gram Tomato paste
  • 1 tablespoon Smoked paprika powder
  • 2 tablespoon All purpose flour
  • 1 Canned tomato (400g) Chopped tomatoes in tomato juice
  • 1000 ml Water
  • 2 tablet Beef bouillon tablets
  • Salt & pepper to taste
  • 6 tablespoon Greek yoghurt or sour cream
  • Chopped celery leaves or parsley

Instructions

  • Heat butter or oil in a pot over medium heat and add onion and garlic.  Fry the onion and garlic for 2 – 3 minutes. 
  • Add minced beef and fry until the beef is mostly browned.
  • Add paprika and celery and fry for 3-4 minutes. Add tomato paste and stir.
  • Sprinkle smoked paprika powder and all purpose flour over the vegetables / beef and stir.  Fry for a minute. Add canned tomato, 1000 ml = 1 L water, beef bouillon tablets and bring to a boil.
  • Put a lid on and reduce to a low heat, and cook for 30 minutes or until the vegetables are soft.  Check the taste and add salt and pepper if necessary. Serve hot, with a dollop of Greek yoghurt and chopped celery leaves.  

Notes

If soup remains, cool and store it in the refrigerator.
