This time I will write about Japanese bacon spinach spaghetti. It’s easy and delicious, so I make it quite often when fresh spinach is available. It doesn’t contain any special ingredients, but it’s very tasty.  As you can prepare it in a short time, I make it when I don’t have time or on weekdays. 

I used to season with only salt and pepper, but now I also add Japanese seasonings (Japanese soy sauce and mirin), which makes it a Japanese style. Bacon and garlic give a good taste, so even if the seasoning is simple, it can be delicious enough.

Recipe tips

It’s simple to make, so there aren’t many tips, but I’ll write some in this paragraph.

I use spinach here, but you can replace it with other vegetables, or you can add other vegetables.  For example, you can use mushrooms, broccoli, onions, asparagus etc.

I season with mirin and Japanese soy sauce, and add a pinch of salt and pepper to taste. Mirin is added to create a mild taste. But if you don’t have mirin, you don’t need to buy it, because it’s delicious enough without it.  Also If you have dashi granules or powder, it is delicious to add a small amount (1 teaspoon).

Bacon contains salt, please adjust the amount of seasoning according to the saltiness of bacon.  Moreover, the salt content of soy sauce varies depending on the product, so it is a good idea to add it little by little to check the taste and add it as needed.

Equipment

Ingredients

  • 100 gram Slices of bacon (cut into strips)
  • 400 gram Spinach
  • 1 tablespoon Olive oil or vegetable oil
  • 2 cloves Garlic (finely chopped)
  • 140 ~160 gram Dried spaghetti
  • 2 Liter Water
  • 2 teaspoon Salt for boiling spaghetti
  • 1 ~ 1½ tablespoon Mirin
  • 1 ~ 1½ tablespoon Japanese soy sauce
  • a pinch of Salt & pepper

Instructions

  • Preparation : wash the spinach and drain the water. Boil plenty of hot water and put spinach in boiling water, submerge the spinach and boil for about 1 minute. Immediately soak in cold water after boiling. When it cools, transfer it to a cutting board and cut it into 2~3 cm width. Then squeeze the spinach to drain excess water and set aside. (if you don’t cook spaghetti immediately, keep it in the fridge until required).
  • Put 2 L water in a pot and bring to a boil and add 2 teaspoon salt. Stir the boiling water and add the spaghettiand ensure it is completely submerged. Cook for 8–12 minutes until the desired firmness. Please adjust the time to your liking.  Stir the spaghetti occasionally to prevent it sticking together.  After cooking, drain. 
  • Heat a tablespoon of oil in a frying pan over low heat, add chopped garlic and fry until the garlic fragrance comes out.
  • Increase heat to medium heat, add bacon and fry until slightly browned.
  • Add spinach and mix and fry.  Then add drained spaghetti and mix. Season with mirin and soy sauce and mix well. Check the taste and adjust the taste with salt and pepper.

Notes

If you like a rich taste, you can add butter (10 grams) at the end and mix.
