These matcha green tea muffins are soft cake-like muffins with crispy crumble topping. They are packed with full green tea flavor and as an accent I have added white chocolate pieces that goes well with matcha. Muffins are easy to make and delicious. You can eat freshly baked muffins in an hour after you start making them.  If you like green tea taste, you will love this muffin.

Matcha seems to have gained popularity all over the world.  Nowadays you can easily find “matcha green tea latte”, “Matcha green tea frappuccino” etc. at cafés here in the Netherlands.   

It is essential to use good quality matcha for matcha green tea muffins. Earlier I bought some cheap matcha powder and it had greyish green color and there was almost no aroma and taste of matcha.  You don’t have to obtain premium one for baking, but purchase one of good quality.  Also pay attention not to buy the products containing sugar or powdered milk which are not suitable for this baking recipe.

Good matcha powder has a vivid dark green color.  When you smell it, it has a strong aroma.  If you taste it, it has a bitter taste, but it will leave a sweet aftertaste.  So good matcha powder has a good balance between the bitterness and sweetness.

How to use and store matcha powder

You can use matcha not only for drinks, but also for sweets (muffins, cakes, cookies, ice cream etc)  and dishes.  It’s very delicious if you mix salt and matcha powder and serve it with tempura, hot vegetables, etc. 

It is best to buy a small amount of matcha and use it up as soon as possible after opening it. As matcha is sensitive to high temperature and humidity, keep it in the fridge once you open the package.

For longer period storage, store matcha in the freezer.  I usually purchase a couple of packages of matcha when I visit Japan.  Then I keep them in the freezer.  When using it, return it to room temperature before opening it to prevent condensation. Close the rest tightly and put it in the freezer again.  This way you can keep it in a good condition for a long period.

Equipment

  • Muffin pans (12 muffins with 7cm diameter)
  • Handmixer

Ingredients

  • 40 gram * Flour for crumble
  • 60 gram * Granulated sugar for crumble
  • 5 gram * Matcha powder for crumble
  • 35 gram * Butter (cold) for crumble
  • 65 gram Butter (room temperature)
  • 100 gram Granulated sugar
  • Eggs (room temperature)
  • 50 gram Sour cream
  • 130 gram # Flour
  • 1 teaspoon # Baking powder
  • 20 gram # Almond powder
  • 1 pinch # Salt
  • 1 tablespoon Milk
  • 15 gram Matcha powder
  • 20 gram Milk to mix with matcha powder
  • 50 gram Chopped white chocolate or white chocolate chips

Instructions

  • Preparation : preheat the oven to 180C = 356F. 
    Line muffin pan with cupcake liner.
    Combine the powders marked with # (130g flour, 1 teaspoon baking powder,  20g almond powde and a pinch of salt) and sift.
  • To make crumble topping : rub the butter into the flour mixture (flour, sugar, matcha powder) until mixture resembles coarse crumbs.  Place the crumble in the fridge until required.
  • Put butter (65 g) and granulated sugar (100g) in a bowl and mix well with a handmixer until it becomes whitish and fluffy. 
  • Add eggs in 2-3 portions and mix well each time.  Then add sour cream and mix well.
  • Add half of the powders marked with # and mix with a rubber spatula. Pour one table spoon milk into the batter and mix lightly. Add the other half of the powders marked with # and mix with a rubber spatula.
  • Put matcha powder (15g) in a small bowl and pour milk  (20g) to matcha and mix well.
  • Add matcha milk mixure to muffin batter and mix well until all combined
  • Add chopped white chocolate and mix gently.
  • Spoon the batter evenly into each liner.  
  • Sprinkle the crumble over the tops of the muffins batter.
  • Bake 25 – 30 minutes or until a pick inserted in the center comes out clean. Cool the muffins in the pan for 5 – 10 minutes, then transfer to a wire rack to cool completely.
     

Notes

If you like, you can also sprinkle a mixture of powdered sugar and matcha on the muffins.
