Mushroom sauce for meat is a spicy sauce with plenty of mushrooms that goes well with meat. This is a popular sauce with my family. When you talk about mushroom sauce, you often think of a creamy sauce. However, this sauce is spicy and a little sweet, since it is sautéed mushrooms seasoned with tonkatsu sauce, sugar, grated ginger, and curry powder.  The taste may be a bit like a BBQ sauce. It’s a taste that everyone will love once you eat it. I usually eat the mushroom sauce with pan-fried pork, hamburger steak, or sautéed chicken.

Recently, mixed mushrooms packages are available at supermarkets, which is very convenient and I often buy them. You can enjoy a different texture and flavor by mixing various types of mushrooms. Of course, it’s delicious to make with just one kind of mushroom, but if you can get it, try to purchase mixed mushrooms.

How to make

In general you don’t need to wash commercially available mushrooms with water, as they will change of the texture and flavor.  If the mushrooms are dirty with some soil, wipe them gently with a damp paper towel. After removing hard or damaged parts, cut them into a size that is easy to eat.

Heat the oil in a frying pan and fry the mushrooms over medium to high heat. When the mushrooms are cooked and tender and browned, sprinkle with seasoning.  Reduce the heat to low and simmer a little.  

In fact, depending on the meat dish, it’s a good idea to fry the mushrooms in a frying pan with the meat, if you have a space to fry the mushrooms.  I usually fry mushrooms in another frying pan, then transfer the mushrooms to a frying pan in which I have cooked meat and add seasonings to finish the sauce.  This will add the flavor of the meat to the sauce.

Ingredients

  • 200 gram Mushroom mix
  • 25 gram Ginger (peeled and grated)
  • 4 tablespoon Tonkatsu Sauce
  • 2 tablespoon Sugar
  • 1 teaspoon Curry powder
  • Appropriate amount of Chopped parsley or chives (optional)

Instructions

  • Mix the seasoning ingredients (grated ginger, tonkatsu sauce, sugar, curry powder) in a small bowl.
  • If the mushrooms are dirty with soil, wipe them gently with a damp paper towel. After removing hard or damaged parts, cut them into a size that is easy to eat.
  • Heat the oil in a frying pan and fry the mushrooms over medium to high heat. (In fact, depending on the meat dish, you can fry the mushrooms in a frying pan with the meat, if you have a space to fry the mushrooms.) 
  • When the mushrooms are cooked and tender and browned, sprinkle with seasoning. Reduce the heat to low and simmer for a couple of minutes. If the sauce became thick, add a little water (1 ~2 tablespoon water) to adjust. Sprinkle the sauce over the meat. Sprinkle parsley or chives, if any.

Notes

Regarding tonkatsu sauce you can purchase it at Asian supermarkets. But if you can’t get it, mix ketchup (2 tablespoon), Worcestershire sauce (2 tablespoon) and a little sugar (1/2 teaspoon) in a small bowl.  After checking the taste, adjust the seasoning to your liking.
Meat cooking time is not included in the cooking time.
