Our favorite onion dressing is very easy to make, tasty and versatile.  So I regularly make it at home. Dressings are often used in fresh vegetable salads, but you can use this onion dressing for meat dishes and hot vegetables as well.  I particularly like to sprinkle it over hamburger steak and drizzle a little amount of soy sauce on top. Then, the refreshing taste of the dressing neutralizes the oiliness of the hamburger steak, and you can eat plenty of raw vegetables with it.  Since drizzling soy sauce, it goes well with rice as well.

In fact, it is very easy to make, put all the ingredients in a wide-mouthed jar and stir with a hand blender or use a food processor until smooth. You can put it in a clean jar and store it in the refrigerator for about a week, so it is convenient to make a large amount and keep it in the refrigerator.

Depending on the onions, the taste is sharp immediately after making, but the next day it will be mellow.  Therefore, I often make it the day before using it and keep it in the refrigerator.

Since it stores in the fridge, if you want to sprinkle on meat dishes, it’s a good idea to take it out from the fridge about 30 minutes before use to make it to room temperature.

There are many onion dressing recipes, but I think this is one of the simplest. While there are many recipes that use soy sauce in Japan, I do not use colored seasonings or ingredients. So the result is a beautiful white-color onion dressing.  However, if you like, you can use lightly colored vinegar, sugar or add other ingredients such as soy sauce, ketchup, and garlic to make your own variations.

This dressing goes so well with avocado. Hence you can dress ripe avocado, cucumber and lettuce to make a beautiful yellow-green salad. This is one of my favorite salads with this dressing.

If you leave the dressing for a while, it will be split into two layers, so shake well before using it.

Equipment

  • 1 Food processor or Hand blender

Ingredients

  • 200 gram Onion
  • 1 teaspoon Salt
  • Appropriate amount of Ground black pepper
  • 150 ml Vinegar (colourless)
  • 100 ml Vegetable oil / Olive oil
  • 1½~2 tablespoon Fine granulated sugar or caster sugar

Instructions

  • Cut the onions into pieces of appropriate size, put them in a food processor, and add salt, ground black pepper, vinegar, oil, and sugar.
  • Process until smooth. Alternatively, you can put the ingredients in a wide-mouthed jar and stir with a hand blender until smooth.
  • Pour the dressing into a clean jar, close the lid and store in the refrigerator. Please use up within a week.

Notes

Please adjust the seasoning amount, the type and ratio of vinegar and oil to your liking.
