Quick and easy Earl Grey tea cookies

Freshly baked homemade cookies taste great and are easy to make.  Why don’t we make them regularly?  Once you made them, you will surprise how easy it is to make cookies. Therefore today I write about a quick and easy Earl Grey tea cookies recipe.

Icebox cookie

“Quick and easy Earl Grey tea cookies” is a good example for beginners, as no cooking experience is necessary. This is an icebox (or refrigerator) cookie and has a nice buttery flavor and crisp texture. 

The dough is formed into a log, and chilled in the fridge or freezer and sliced before baking.

Since icebox cookies are refrigerated or frozen, you can prepare the dough in advance. The frozen dough will keep its flavor for a month or so and you can slice and bake the cookies any time.  Please click the link below for the short history of icebox cookies, if you are interested.

This time Earl Grey tea is added for a flavor, but you can replace this with anything you like, such as lemon zest, coco powder or matcha powder.  Also chocolate chips, chopped dried fruits, chopped candied fruits, nuts etc. can be mixed with the dough.  Thus you can create your favorite combinations.  

The cookie dough made by food processor

Recently I make baked goods more often, but I bake smaller portions than earlier.  I use a small food processor to make a portion of dough for cookies, tart or pie, as the food processor does all the work very speedy.  Usually the butter needs to be at room temperature before making dough, but you can use cold butter from fridge for food processor.   

The advantage of a small portion, it takes much less time to make the dough and bake cookies.  Actually I bake cookies in between the housework.  I bake a small portion and we eat them all within a couple of days.  This way we always eat freshly baked cookies.

Quick and easy Earl Grey tea cookies

Equipment

  • Food processor

Ingredients

  • 100 g All purpose flour
  • 40 g Fine sugar
  • 4-5 g Earl Grey tea fine tea leaves, 2 tea bags
  • 50 g Unsalted butter
  • 1 Egg yolk
  • Granulated sugar (optional)

Instructions

  • Preheat oven at 160 degrees C.
  • In a food processor, pulse flour, sugar, Earl Grey tea until combined. 
  • Add butter and process until sandy. 
  • Add egg yolk and pulse until dough comes together. 
  • Form the dough into a log. Wrap it in cling film and put in the fridge or freezer until firm about 1.5 hours in fridge or 20 minutes in freezer.
  • Spread granulated sugar on a baking parchment paper or cling film.  Roll log over sugar to coat. Slice log into 7-8mm -thick.
  • Line baking sheet with baking parchment paper. Place the slices on the prepared baking sheet, 3 cm apart.
  • Bake cookies in the preheated oven (at 160 degrees C) for about 20 minutes or until cookies are golden brown around edges.  Remove from oven and transfer cookies to wire racks to cool down.
  • After cookies are completely cool, store cookies in airtight container at room temperature.

Notes

*** Method making dough without food processor ***
  • Bring unsalted butter to room temperature.
  • In a bowl, cream the butter and sugar well.Add egg yolk and mix well.
  • Add dry ingredients (flour and Earl Grey tea) to butter mixture.
  • Follow the same steps as from no. 5 (form the dough into a log)
