Soy milk jelly with ginger syrup is a soft soy milk jelly served with sweet syrup with ginger flavor. It has a light and refreshing taste and the very soft soy milk jelly melts in your mouth. So even if you are full, you can eat it.  Besides it’s the perfect dessert after fried or rich dishes.

It’s a super-simple jelly that just warms soy milk and melts gelatin. The soy milk is not sweetened and the syrup with grated ginger goes really well together.  This is an Asian dessert that anyone can make. The style of making it in a large bowl and sharing it as much as you like is also fun. Of course, it’s also nice to make it in a small dessert bowl for the number of people.

Ginger syrup

I usually cook granulated sugar and water in the microwave, let it cool, and then add grated ginger to it. Please adjust the amount of ginger to your liking.  You can add grated ginger as it is, or squeeze it and add only the juice.  If you like, you can add grated ginger or the juice to dark brown sugar syrup or maple syrup.  Please try various things.

If you don’t like ginger, you can sprinkle syrup without ginger. My son doesn’t like ginger syrup, so he eats jelly with maple syrup. Therefore, at home, I divide from a large bowl of jelly into each dessert bowl and each one sprinkles it with their own favorite syrup when eating.

Time for the jelly to set

It’s very easy, but don’t forget the time it takes to set. Due to the small amount of gelatin, it will take at least 3-4 hours to harden in the refrigerator, so please calculate the time and prepare early.

Ingredients

  • 5 ~ 6 gram Sheet gelatin
  • 500 ml Soy milk (unsweetened)
  • 100 ml Water for syrup
  • 70 gram Granulated sugar for syrup
  • 1 ~ 1½ teaspoon Grated ginger (peeled and finely grated)

Instructions

  • Soak the sheet gelatin in plenty of water for 10 to 15 minutes.
  • Put soy milk in a pan and heat it over medium heat.  Warm up to about 60 C = 140F degrees. (Since the temperature at which gelatin melts is 40C = 104F to 50C = 122F degrees, be careful not to bring it to a boil).
    Remove the pan from the heat. Drain the gelatin, add it to the soy milk, and dissolve it completely while mixing.
  • Pour the soy milk gelatin mixture into a bowl or container, allow to cool to room temperature, then chill in the refrigerator for 3-4 hours to set.
  • Make ginger syrup. Place water and granulated sugar in a microwave safe bowl and heat in a microwave to dissolve the sugar. When the sugar has melted, cool to room temperature, then add grated ginger or ginger juice and mix well. Store in the refrigerator until needed. When the jelly has set, pour the ginger syrup over it.

Notes

The time to set is just an indication. It may take longer depending on the condition of the refrigerator and the shape of the bowl /container.
If you like a slightly harder jelly, please increase the amount of gelatin a little.
