About Yaki udon – stir fried noodles

Yaki udon is a Japanese stir fried dish with udon (thick white noodles), meat and vegetables.  It’s so easy and fast that it’s a convenient dish when you don’t have time.  If you have a stock of frozen udon noodles in the freezer, you can quickly make it with the vegetables and meat from the refrigerator.

This recipe uses thinly sliced ​​beef and green onions, which are often used for sukiyaki, so I seasoned it the same as sukiyaki. It is a sweet and salty seasoning.  Then top it with a soft-boiled egg. You don’t have to have a soft-boiled egg, but it’s delicious when eaten with yaki udon.

Regarding frozen udon

Udon is a thick and chewy noodle. It is one of the noodles that you often eat in Japan.

Nowadays you can buy frozen, vacuum packed and dried udon noodles. But if you can, please  purchase frozen ones, this will be the best choice.  After trying all of them, I think the frozen ones are the most delicious. 

I thaw frozen udon in the microwave and use it. Microwave ovens are very convenient because you don’t have to boil water. Remove the frozen udon from the bag, place it on a microwave safe plate and wrap it with cling film. Then heat it in the microwave (600W) for 2 and a half to 3 minutes.

When heating two frozen udon at once, arrange them on a plate so that they do not overlap and heat for about 5 ~6 minutes.  Depending on the product, there are instructions on the package when thawing in the microwave. In that case, please follow it.

Ingredients

  • 300 gram Thinly sliced beef or pork (cut into bite size)
  • 1 tablespoon Vegetable oil
  • 100~130 gram Green onion (thinly sliced)
  • 3 Frozen noodles
  • 2.5 tablespoon Mirin
  • 2 tablespoon Sugar
  • 3 tablespoon Japanese sake or Chinese rice wine or sherry
  • 4.5 tablespoon Japanese soy sauce
  • a pinch of Ground black pepper (optional)
  • 3 Soft boiled eggs (optional)

Instructions

  • Remove the frozen udon from the bag, place it on a microwave safe dish, and wrap it with cling film. Heat the udon noodles in the microwave (600W) for two and a half to three minutes. If you want to heat two frozen udon noodles at once, arrange them on a plate so that they do not overlap and heat them for 5 to 6 minutes.
  • Add oil to a frying pan and heat over medium heat. When it gets hot, add beef and fry.
  • When the meat turns brown, add seasoning (mirin, sugar, sake, soy sauce, black pepper (optional)), but if you fry for a long time, the beef will become hard, so add seasoning even if it still remains pink part. Cook for about 1 minute to absorb the seasoning.
  • Add udon, mix well and simmer for 3-4 minutes until all seasoning is gone.
  • Add 3/4 of the chopped green onions and mix for 2-3 minutes until the green onions are a slightly soft.
  • Serve on a plate, sprinkle with the remaining green onions, and place the soft-boiled egg cut in half on top.

Notes

Besides beef, thinly sliced ​​pork is okay. Please use the one you like. 
Add a little coarsely ground black pepper and it will be spicy and delicious, so add it if you like.
