Rhubarb crumble – One of my family favorite desserts

The rhubarb crumble is one of my family favorite desserts. When rhubarb season comes, we eat rhubarb crumble regularly.  The peak season lasts for a couple of months from April.  Rhubarb is one of the pure seasonal products and you can’t buy it in other seasons except for frozen rhubarb.  Therefore let’s enjoy rhubarb when it is in the season!  I would like to share my easy rhubarb crumble recipe in this post.

Rhubarb is not common in Asian countries, I suppose.  When I was in Japan, I never saw rhubarb at local supermarket.  Since I ate warm rhubarb crumble with ice cream at a pub in the UK, I have become a big fan of this classic dessert.  Since then I am fascinated with rhubarb crumble and make this dessert at least several times in the season. 

Rhubarb is sour and has lovely colors, vivid red/pink and green. There are many ways to enjoy rhubarb, but this simple dessert is easy to make and most satisfying. I love the combination of tart rhubarb, crunchy crumble and sweet vanilla ice cream.  The hot/warm rhubarb, crumble and cold melting ice cream are really wonderful.  I think everyone will love it once you eat it.

Crumble with fruits

Crumble is much easier than pie or tart.  You don’t need to make pie/tart dough in advance and no rolling is required.  I use a food processor to make crumble.  Hence it takes a couple of minutes to make crumble including measuring the ingredients.  Off course you can make the crumble with your fingers or using pie cutter.  That’s also nice to do as it takes only 5 – 10 minutes.

If you like, you can add some nuts, muesli or spice (such as cinnamon) to the crumble for extra flavor and texture.  You can freeze any leftover crumble and use it for muffin toppings or another fruit crumble later.

Although this post is about rhubarb crumble, I think crumble topping goes well with any kinds of fruits.  In my opinion sour fruits fit best. I particularly love plum or apricot crumble, as these fruits are quite sour. Usually I use seasonal fruits.  From spring to summer plenty of stone fruits (plum, apricot, peach, nectarine, cherry etc.) will be available.  So there will be lots of opportunities to make fruit crumble. It is nice to mix a couple of fruits as well.  

Serving idea

You can eat rhubarb or fruit crumble as it is.  But it is tastier to serve with scoops of vanilla ice cream or cold custard cream or whipped cream, when crumble is still hot or warm.  When the dessert is served cold, serving with warm custard sauce is my favorite.  So the hot and cold combination gives something extra.  Actually any combination is possible and fine.

Equipment

  • Food processor
  • Oven proof dish

Ingredients

  • 750 gram Rhubarb or fruits
  • 40 gram Light brown sugar (for rhubarb)
  • 140 gram Flour (for crumble)
  • 30 gram Almond powder (for crumble)
  • 70 gram Light brown sugar (for crumble)
  • 85 gram Cold butter (for crumble)

Instructions

  • Preparation : preheat the oven to 180C.  Grease oven proof dish with butter. Clean rhubarb and cut into 2cm lengths.
  • To make crumble : put flour, almond powder and light brown sugar in a food processor. Pulse briefly until the dry ingredients are mixed.
  • Add butter and pulse briefly to form a coarse, crumbly mixture.  Keep the crumble in the fridge until required.
  • Place the prepared rhubarb into a large bowl. Sprinkle with light brown sugar and mix well.
  • Put the rhubarb and sugar mixture in the oven proof dish.  Sprinkle the crumble over the rhubarb mixture. ( If you like lumpy crunchy crumble, take an appropriate amount of crumble, grab it with your hands and lump it.  Then break the lump and sprinkle the lumpy crumble over the rhubarb.)
  • Bake for 35 – 40 minutes at 180 C or until crumble topping is golden brown and the rhubarb has softened and is bubbling. Serve warm or cold with ice cream, custard sauce or whipped cream if desired.

Notes

Flour and almond powder should be total 170g.  You can increase or decrease of almond powder amount.
If you don’t use food processor, rub the butter into the flour mixtures (flour, almond powder and light brown sugar) until mixture resembles coarse crumbs to make the crumble topping.
