Green onion miso chicken is a chicken dish with miso and green onion.  The combination of green onion and miso is very common in Japan.  In Japan, there is a versatile seasoning called “Negi miso”.  It is made with plenty of green onions and miso with sweet and spicy seasoning. You can put it on rice as it is, or use it as a seasoning for stir-fry or as a dip.

In this recipe, I used this green onion miso for chicken dishes. Therefore, the sweet and spicy seasoning goes well with the rice.   As long as you have miso, you can make it with easily available ingredients.  So, once you know it, it will be a very convenient dish.  Miso is a fermented food and you need to be careful about the amount of salt it contains, but it has many health benefits.  Below is a link to miso’s nutrition, health benefits, and risks,  so please read it if you like.

Recipe tips

Miso

There are various types of miso, but you can use any miso.  However, the amount of salt depends on the miso, so add miso paste less than the amount in the recipe first. If the taste isn’t enough, add a little more.

Chili

I use fresh chili with a mild spiciness. If you don’t have fresh chili, you can use dried chili or paste such as doubanjiang instead. Also, if you don’t like spicy foods or have small children, you can omit chili peppers.

Chicken

Usually I use boneless thighs with skin for this dish, but I think you can use chicken breast as well. Since miso gives a rich flavor to the dish, both the thigh and breast meat will be delicious.

Equipment

  • 1 Frying pan with a lid
  • 1 bowl

Ingredients

  • 500~550 gram Boneless chicken thigh with skin (cut into bite-size pieces)
  • 50~60 gram Green onion
  • 1 Fresh chill pepper
  • 1 teaspoon Grated ginger
  • 1 tablespoon Vegetable oil
  • 6 tablespoon Japanese sake or Chinese rice wine
  • 2 tablespoon Miso
  • 2 tablespoon Mirin
  • 2 tablespoon Japanese soy sauce
  • 2 teaspoon Granulated sugar

Instructions

  • Cut the green onions diagonally to a thickness of 1 to 2 cm. Remove the seeds from the fresh chili pepper and slice them into thin slices. Ginger is peeled and grated.
  • Put miso, mirin, soy sauce and sugar in a bowl and mix well. Then add bite-sized chicken, mix well and leave for about 10 minutes.
  • Put the oil in a frying pan, heat it, and place the chicken skin side down. Keep the remaining marinade.  Fry over medium heat for 3-4 minutes or until slightly browned.
  • Add sake, cover and cook for 7-8 minutes or until the chicken is cooked.
  • Remove the lid and add the remaining marinade and grated ginger and mix.
  • Increase the heat and boil down the sauce a little. Check the taste and adjust the taste if necessary. Add green onions and chili and stir for a couple of minutes until the green onions are soft.  Serve on the plate.
