About marinated chicken and onion

Marinated chicken and onion is a dish called “Nanbanzuke” in Japan. “Nanbanzuke” is a dish of fried meat or fish and flavorful vegetables soaked in a sweet and sour sauce.  It has a light and refreshing taste. I prefer to make it and eat it right away, but you can enjoy it either freshly made or chilled as well. It’s also a good idea to make a lot and eat it the next day!

The sweet and sour taste and onions are appetizing.  Besides, it’s easy to make, so I often make it in warm or hot weather. This time I use only chicken and onions, but you can make a delicious variation with other ingredients, so please refer to the recipe tips below.

Recipe tips

Regarding the ingredients, not only meat but also fish you can use in the same way.  For fish, salmon and horse mackerel are popular in Japan. I mostly use chicken for meat, but I also use pork.  You can use chicken breast or thighs. Or you can use both at once and it’s delicious.

In addition to onions, you can also use green onions, carrots, paprika, etc. Since it is basically not heated, please thinly slice or shred.

Another variation is to fry vegetables in oil instead of meat or fish and soak them in a sweet and sour sauce. And it is a good side dish.  For the vegetables, I often use eggplants, bell peppers, pumpkins, etc.  It’s very colorful and looks appetizing.

Basically, the main ingredient is fried in oil and soaked in a spicy sweet and sour marinade, so you can enjoy it in various ways.  Please try it out and find the version you like.

Equipment

  • 1 Frying pan
  • 1 bowl

Ingredients

  • 450~500 gram Chicken breast / thigh (cut into bite-sized pieces)
  • 2 Onions (about 300 gram)
  • 90 ml Vinegar (rice vinegar or white vinegar)
  • 60 ml Japanese soy sauce
  • 4 tablespoon Fine granulated sugar
  • 1 ~ 2 Dried red chilli pepper (after removing seeds, cut into 2 ~ 3 pieces) If you like spicy food, cut it into small pieces
  • a pinch of Salt and pepper
  • Appropriate amount of Cornstarch
  • Appropriate amount of Frying oil

Instructions

  • Put vinegar, soy sauce, sugar and dried red chili pepper in a bowl and mix well.  (If the sugar does not dissolve, heat it in the microwave for 20 to 30 seconds to dissolve it.)
  • Slice the onion thinly.
  • Add sliced onions to vinegar mixture and mix. (By soaking it in vinegar mixture first, the spiciness of the onion will be reduced and it will be easier to eat.)
  • Season the chicken with a small amount of salt and pepper, and sprinkle with cornstarch and coat the chicken with cornstarch.
  • Add frying oil to a depth of 2 to 3 cm in a frying pan, heat to 180C=356F, and fry the chicken. Turn it over a couple of l times until it is cooked and golden browned.
  • Drain the chicken and add chicken to vinegar mixture while it is still hot, and mix whole.
