Korean spicy chicken with cheese – “Cheese Dak Galbi” is a popular Korean dish with chicken, sweet potatoes, some vegetables and melted cheese.  A couple of years ago, cheese Dak-galbi was a big boom in Japan.  It became so popular that you could often see it on TV. And the convenience stores and restaurant chains all launched similar products.

For seasoning, Korean condiment “gochujang” is used and this gives a very nice savory, sweet and spicy taste to the dish.  As you can see once you eat it, the sweet and spicy seasoning and mild cheese go very well together and are delicious. Korean spicy chicken with cheese is surprisingly easy to make.  Simply put the marinated chicken seasoned with gochujang and other seasonings in a frying pan with the vegetables, cover and cook, and finally add the cheese.  You can get a lot of vegetables and it goes well with rice.

Recipe tips

Gochujang is an indispensable ingredient in this dish.  I think you can buy it at Asian supermarkets. The hotness and taste of gochujang varies considerably depending on the product. So, first add less than the recipe amount, check the taste and add more as needed. Also adjust the amount of sugar if necessary.

The main ingredients used for dak-galbi are chicken, sweet potatoes, onions, cabbage, etc., but you can also arrange and enjoy them freely. I always add sweet potatoes, as the sweetness of sweet potatoes contrasts with the spiciness of gochujang and I find it really delicious. Sweet potatoes change color when exposed to the air, so soak them in water for about 10 minutes before using them.

I usually make it with skillet, and when the cheese melts, I bring it to the table and eat it while entwining it with the cheese.  A skillet keeps the food warm for a long time. You need a lid when cooking. I don’t have a lid for skillet, but I use another frying pan lid instead.

Equipment

  • Skillet and a lid

Ingredients

  • 300 gram Boneless, skinless chicken thighs (cut into bite size)
  • 300 gram Cabbage (cut into large pieces)
  • 100 gram Onion (slice thinly)
  • 200 gram Sweet potato (cut to a thickness of about 7mm) Soak in water for 10 minutes
  • 60 gram Green onion (cut diagonal)
  • 1 tablespoon Sesame oil
  • ** 2 cloves Garlich (grated or finely chopped)
  • **. 15 gram Ginger (peeled and grated)
  • ** 2~3 tablespoon Gochujang
  • **. 3 tablespoon Japanese sake or Chinese rice wine
  • **. 1½ tablespoon Japanese soy sauce
  • **. 1½ tablespoon Sugar
  • 100 gram Shredded cheese (pizza cheese)

Instructions

  • In a bowl, mix ingredients marked with ** (garlic, ginger, gochujang, sake, soy sauce and sugar) to make a marinade. 
  • Add the chicken and mix well with the marinade.  Leave it for about 15 minutes.
  • Heat a skillet over medium heat and add sesame oil.  Add drained sweet potato, and spread sliced ​​onions on top of the sweet potatoes.
  • Put cabbage on it to make a layer of vegetables.  Place the marinated chicken on top of the cabbage. Save the marinade left in the bowl as it will be added later. 
  • Cover and cook on medium low heat for about 15 minutes or until chicken is cooked.
  • Remove the lid and add the remaining marinade. Turn up the heat and stir until the liquid becomes a thick sauce. Then add green onion.
  • Move the ingredients to the left and right to open the center and add the cheese. Cover and heat over low heat for 1-2 minutes or until the cheese melts. 

Notes

The skillet gets very hot, so be careful of burns.
