What is meat miso rice bowl – “Niku miso don” ?

“Niku” is meat and “Don” is a bowl in Japanese. As the name suggests, meat miso rice bowl – “Niku Miso Don” is rice bowl topped with minced meat seasoned with miso. 

Meat miso is easy to make, and you can enjoy the richness of miso and delicious taste of meat.  Meat miso is an excellent companion to rice, noodles and vegetables.  In addition, various arrangements are possible, such as making it a little sweeter for children or spicy with chili pepper. You can make different meat miso by changing the type of meat (beef, pork, chicken), miso (red, white, mix), and sugar (white, light brown, dark brown).  This time I will write about a simple and basic meat miso recipe which I often make.

Meat miso has a rich taste, so it goes well with fresh vegetables such as crispy lettuce, cucumbers, and tomatoes.  I think it goes especially well with lettuce. Also, in Japan, it is very often served with a soft-boiled egg, since the thick egg yolk makes it mellow. I usually serve the meat miso with lettuce and soft-boiled egg in order to add different texture and colors (in fact adding green and yellow colors makes it attractive).

Recipe tips

The salt content of miso varies considerably depending on the type and product. So, first add less than the recipe amount, check the taste and add more as needed. Also adjust the amount of sugar if necessary.

Regarding the soft-boiled egg, you can eat it as it is, but it’s delicious when soaked in soy sauce base marinade.  Here is how to make : put 1 tablespoon each of soy sauce, mirin and water in a microwave safe container, heat in a microwave until it boils. Once boiled let it cool. Put the shelled soft-boiled egg and marinade fluid together in a plastic bag and soak in the refrigerator for half a day to a day. Rotate the egg once or twice during marinade. You can make 1-2 eggs with the above amount, but if you make a lot, increase the amount of marinade fluid.

You can use white sugar, but I often use dark brown sugar because it gives a rich flavor and deep taste. Try various things and find the one you like.

It is also delicious to serve meat miso as a sauce for vegetables and tofu. As you can see in the photo, serving with fried eggplant is very nice.

Equipment

  • a frying pan

Ingredients

  • 400~500 gram Minced meat of your choice
  • 2 cloves Garlic (finely chopped)
  • 15 gram Ginger (peeled and finely chopped)
  • 60 ml Japanese sake or Chinese rice wine
  • 2 tablespoon Miso paste
  • 2 tablespoon Sugar (white or light / dark brown)
  • 2 tablespoon Japanese soy sauce
  • 4 portion Cooked rice
  • 4 Soft boiled eggs
  • 100 gram Lettuce (shredded)
  • some Fresh vegetables of your choice (optional)

Instructions

  • To make meat miso :  put minced meat, garlic, and ginger in a cold frying pan. Add Japanese sake or Chinese rice wine and mix well before heating.
  • When the sake is mixed with the meat (you don’t see any fluid in the frying pan), heat it over medium heat and mix it with a wooden spatula. 
  • When the color of the meat changes to brown, add miso, sugar and soy sauce and mix well.
  • Stir constantly and cook until the liquid is almost gone.
  • Serve rice in a bowl and top with meat miso, lettuce, your favorite vegetables and a soft-boiled egg cut in half.

Notes

<Storage> Put the cooled meat miso in a container with a lid and store it in the refrigerator for up to about 5 days.
The above cook time does not include the cooking time of rice.
