Maybe everyone has heard of tiramisu and has eaten it. This is the tiramisu with matcha flavor  instead of coffee and cocoa flavors. The bitterness of matcha goes very well with the rich, creamy mascarpone cheese.  There are many recipes to use eggs, but this recipe uses no egg in order to make it easily.  But It’s delicious enough without eggs and it is very popular with my family.  In addition, I use ladyfinger biscuits, so all you have to do is make cream and matcha liquid, and then assemble.  After making it, let it sit in the refrigerator for at least 3 hours. Then you can eat scrumptious dessert.

Matcha

Since the matcha is the important factor for this recipe, use good quality matcha.  Good quality matcha has wonderful flavor, vivid green color, and the good balance of bitterness and sweetness. If you like, please read the link below about the nutrition and health benefits of matcha.

To make matcha liquid, mix matcha powder and sugar and add hot water little by little to dissolve the matcha. When dissolving powder in a liquid, not limited to matcha, do not throw the powder into a large amount of liquid from the beginning, but first mix the powder well with a small amount of liquid and dissolve it, and then add little by little and mix it with the whole liquid and it will dissolve well.

Matcha liquid should be lukewarm to soak the ladyfinger biscuits. If it is hot, it absorbs too much and the ladyfinger biscuits will collapse, If it is too cold, it will not soak in easily.

Gelatin

As for gelatin, if you want to cut it cleanly as shown in the picture above, use gelatin to harden the mascarpone cream. However, it is not essential if you make it from glass or a container. Please use it to your liking.

Equipment

  • 24 x 8 x 6 cm form (approx. 1100 ml)

Ingredients

  • 250 gram Mascarpone cheese
  • 90~100 gram Fine granulated sugar
  • 200~250 ml Fresh cream
  • 20~25 Ladyfinger biscuits
  • 1 tablespoon Matcha powder
  • 150 ml Hot water
  • 10 gram Fine granulated sugar
  • 5~7 gram Gelatin sheet (optional)
  • 20 ml Warm water (60C=140F degree) to dissolve gelatin (optional)
  • Extra Matcha powder for dusting

Instructions

  • If you use gelatin, soak sheets of gelatin in a bowl cold water for 5 to 10 minutes, and line the form with parchment sheet.
  • Put 1 tablespoon matcha powder and 10 gram sugar in a bowl, and pour hot water little by little with a whisk until no lumps. Let it cool while making the mascarpone cream.
  • Place the mascarpone cheese in a large bowl. (If it is hard, heat it in the microwave for a few seconds to soften it.) Add granulated sugar and mix well to make a smooth cream.
    If you use gelatin, once gelatin is soft, lift the sheet from the cold water.  Wring gently with your hand to remove excess water. then add to warm water.  Stir until dissolved.  Pour dissolved gelatin into mascarpone cheese mixture and mix well.
  • Put fresh cream in another bowl and whisk with a hand mixer until stiff peaks form. 
  • Add the whipped cream to the mascarpone cheese mixture in two portions and mix gently with a rubber spatula each time.
  • Soak lady finger biscuits one by one in matcha liquid and arrange them on the bottom of your form.  Spread half of the mascarpone cream mixture over the ladyfingers. Smooth out the surface.
  • Dip the remaining ladyfingers in the matcha liquid and place them on top of the mascarpone cream mixture.  Finally, spread all the remaining cream on the biscuit and spread it evenly.
  • Refrigerate for at least 3 hours, preferably overnight.  Before serving, dust matcha powder over the surface.

Notes

Adjust the amount of biscuits depending on the container you make.
