Strawberry mousse is very easy to make and tastes like eating strawberries themselves. This is one of my favorite desserts to make during the strawberry season. Strawberries are pureed, so you can use cheap strawberries with irregular shapes and sizes.  

I make it in a large bowl or container and everyone puts it into their own bowls to eat.   I used to make it in a small pudding mold, but it didn’t come out well, so I changed to the current easy way.  This is a great dessert to make with peak seasons fresh strawberries and eat with your family.

Recipe tips

You can puree the strawberries in a food processor or mash them with a fork. Using a food processor will make it smoother, and mashing with a fork will make it easier to retain the strawberry texture. Actually, each has its merits.  So make your puree any way you like.

As for the sugar added to the puree, you can adjust the amount according to the taste of the strawberries.

When combining the puree and whipped cream, place the bottom of the puree bowl in cold water to thicken to the same thickness as the whipped cream before mixing.  Otherwise, it may split into two layers.

Feel free to adjust the amount of gelatin to your liking. If you prefer a soft mousse, use 8g, and if you prefer a firmer texture, use 10g.

It’s nice to add leftover strawberries and whipped cream when serving.

Equipment

  • 2 bowls

Ingredients

  • 350~400 gram Strawberries
  • 80~90 gram Fine granulated sugar
  • 1~1½ tablespoon Lemon Juice
  • 8~10 gram Sheet gelatin
  • 180 ml Fresh cream (35% fat)

Instructions

  • Soak sheets of gelatin in a bowl cold water for 5 to 10 minutes.  Remove the hull and put strawberries in a food processor or blender and make puree.  Alternatively, mash with the back of a fork.
  • Put half of the strawberry puree, granulated sugar and lemon juice in a bowl and heat in the microwave for 20-30 seconds to dissolve the sugar completely.   The temperature should be around 50-60 degrees to melt the gelatin.
    Once gelatin is soft, lift the sheet from the cold water.  Wring gently to remove excess water. then add to warm puree.  Stir until dissolved.  Add the remaining strawberry puree and mix well.
  • Put fresh cream in another bowl and whisk with handmixer until soft peak is formed.
  • Place the bottom of the bowl of strawberry puree in cold water to thicken it to the consistency of whipped cream.  When thickened, mix well with whipped fresh cream.
    Pour into a container or clean the rim and surroundings of the bowl and chill in the refrigerator for 2-3 hours to set.
    Scoop with a large spoon and serve. Decorate with strawberries, whipped cream, or mint if you like.

Notes

Once you make it, store it in the refrigerator and eat it the same day or the next day at the latest.
