My family favorite, Teriyaki mayo chicken salad
In this post I would like to share teriyaki mayo chicken salad. As the name suggests, teriyaki chicken is coated with garlic mayonnaise and placed on a salad bed. One day I saw the recipe on a Japanese cooking website where mayonnaise drizzled on top of pan-fried teriyaki chicken. It looked delicious, but there were many steps. So I changed it to make it easier and faster. The family reaction was very good. In a blink of an eye, the plate became empty.

How to make this salad
Firstly make fried chicken, add fried chicken to teriyaki sauce and mix until chicken is well coated with teriyaki sauce. Then mix the chicken with garlic mayonnaise. Place the chicken on fresh vegetable salad.
Regarding chicken, you can use either boneless chicken breast or thighs. If you like lighter taste, chicken breast may be a good choice.
As for salad, I often use salad leaves, lettuce, cucumber, tomato and onion. However, you can use anything you like, such as paprika, carrot, celery etc. You can buy a bag of fresh salad leaves at supermarkets. I love baby salad leaves and I find the bag very handy and easy because you only have to open the bag.
Since the teriyaki mayo chicken is well seasoned, you can eat a lot of fresh vegetables.
We eat this dish with baguette, but I think other breads and potato dishes are good too.

Teriyaki mayo chicken salad
Equipment
- Frying pan or Wok pan
- bowl
Ingredients
- 600 gram Boneless chicken breast or thighs. (cut into bite size)
- 1/2 cup Flour
- 3 tablespoon Soy sauce (for teriyaki sauce)
- 3 tablespoon Japanese sake or Chinese rice wine or sherry (for teriyaki sauce)
- 1.5 tablespoon Sugar (for teriyaki sauce)
- 1.5 tablespoon Mirin (for teriyaki sauce)
- 5 tablespoon Mayonnaise
- 2 cloves Garlic (finely chopped or grated)
- 2-3 handful Salad leaves
- Vegetables of your choice (eg. tomato, cucumber, onion, paprika, celery etc.)
- Salt & Pepper to taste
- Oil for deep frying
Instructions
- Cut chicken into bite size and sprinkle salt & pepper over the chicken. Put flour in a plastic bag, add chicken to the flour.
- Shake a bit in order to coat chicken with flour.
- Heat the oil until 170 C = 338 F degree, and deep-fry chicken until the chicken becomes light brown. increase the heat and fry until crispy, and drain the oil well.
- Put mayonnaise and finely chopped garlic in a bowl and mix well.
- Add soy sauce, Japanese sake (or Chinese rice wine or sherry), sugar, mirin to a frying pan and bring it to a boil over high heat.
- Then add fried chicken and mix well until the chicken is well coated with teriyaki sauce.
- Add teriyaki chicken to mayonnaise mixture and mix until the chicken is well coated with mayonnaise.
- Nicely arrange salad leaves and vegetables of your choice on the plate.
- Place chicken on the salad.
