“Caramelized orange chicken & vegetables” is a dish with chicken and a lot of vegetables in sweet and sour seasoning.  Since the sugar is caramelized, it has a deep taste. Originally I made it with red wine instead of orange juice.   However, my son doesn’t like braised dish with red wine so much, so I tried using the orange juice that I happened to have at home and it was delicious.  Since then, I often make this dish with orange juice.

By making caramel sauce, a little bitterness makes the dish uplifted together with delicious stock from chicken and vegetables.  The good thing about this dish is that you can eat a lot of vegetables.  If you like chicken, I think you can reduce the vegetables and increase the chicken.  It doesn’t require any special ingredients and you can easily make it, so please try it.

As I wrote above, it is also delicious to use red wine instead of orange juice. It looks red and chic, and it’s a big difference in taste just by changing one ingredient. 

I think it’s best to use chicken thighs for this dish. I usually use boneless skinned thighs, but skinless thighs are fine as well.  And if you cut it to a large size, it will have a good presence.

When making caramel sauce, wait until it turns deep brown.  After adding butter and garlic, add the meat in which surface has been baked in advance, but be careful because it is easy to burn.

Equipment

  • 2 Frying pan (one is with a lid)

Ingredients

  • 450 gram Boneless chicken thighs
  • 1 tablespoon Vegetable oil
  • 200 gram Onion
  • 150 gram Carrots
  • 3 Bell peppers
  • 150~200 gram Mushrooms
  • 10 gram Finely chopped garlic
  • 45 gram Granulated sugar for caramel
  • 20 ml Water for caramel
  • 15 gram Unsalted butter
  • 200 ml 100% orange juice
  • 1.5 tablespoon Japanese soy sauce
  • 1~2 Dried bay leaf
  • 1 tablespoon Vinegar
  • Appropriate amount of Salt & peppers

Instructions

  • Cut the vegetables into bite-sized pieces.
  • Cut the chicken into large pieces (about 2 pieces  per person). Then sprinkle with salt and pepper. Heat the oil in a frying pan and fry the chicken over high medium heat until the outside is golden brown. (You don't have to cook the chicken completely at this stage). 
  • Put sugar and water in another frying pan to make caramel. Dissolve the sugar in water in a frying pan and heat until it turns deep brown. When it turns brown, add butter and garlic to melt the butter. (Be careful of splashing). 
  • Add chicken and fry lightly. Be careful not to burn it too much as it will be browned very quickly.
  • Add orange juice and soy sauce.
  • When the caramel has dissolved and boiled, add vegetables and bay leaf, cover and simmer on low medium heat for about 20 minutes.  (Stir the whole once or twice during cooking).
  • After 20 minutes, check if it is cooked with a fork or bamboo skewer. If it is not tender, cook for an additional 5 minutes. There is a lot of water coming out from the vegetables, so remove the lid and increase the heat to boil down.  When the broth looks like syrup, add vinegar and season with salt and pepper to taste.

Notes

You can also replace orange juice with red wine. It’s also delicious. Please try that as well.
