About cheese paella with chicken and shrimp

This time it is “cheese paella with chicken and shrimp” that you can easily make in a frying pan.  Paella, as you may know, is a rice dish from the Valencia region of Spain. It looks gorgeous and delicious with plenty of meat, seafood, and vegetables.  I would like to share a recipe for a paella that I make regularly for my family, although it may not be the traditional paella.

Regarding ingredients, I use chicken and shrimp, but sometimes I use only chicken. And I always use paprika, ripe tomato, and onion as vegetables.  I don’t use saffron, so the color of the paella is red.  I like that you can easily make it with just one frying pan without using any special ingredients.  Due to adding two kinds of cheese, it has a rich and deep taste.  Therefore, it’s a good balance to serve with a fresh vegetable salad.

For the shrimp, I use the ready-to-use boiled shelled shrimp sold at supermarkets.  If you cook it for a long time, the shrimp will harden, so when you add the cheese at the end, add it together and heat it for a short time.  If you use frozen shrimp, thaw it, boil it briefly, and add it at the end. 

In addition to shrimp and chicken, you can use various ingredients such as seafood and sausages etc., so please use it as you like.

As for vegetables, in addition to paprika, onions, and tomatoes, green beans, asparagus, broccoli and green peas are also good.  If you change the way that you cut vegetables, it will look different, so it is good to try various things.

Equipment

  • 1 a frying pan (28 cm diameter) with a lid

Ingredients

  • 300 ml Short grain rice
  • 300 gram Chicken thighs (cut into bite-size)
  • Appropriate amount of Salt & pepper
  • 1 tablespoon Olive oil
  • 100 gram Shrimps (boiled and peeled)
  • 120~150 gram Paprika
  • 120~150 gram Onion
  • 150 gram Ripe tomato
  • 1 teaspoon Finely chopped garlic
  • 4 tablespoon Tomato ketchup
  • 300 ml Hot water
  • 1 Chicken stock cube
  • 3 tablespoon Powdered cheese
  • 80~100 gram Grated pizza cheese
  • 1 tablespoon Chopped chive or parsley
  • 1 ~2 Lemon or lime (cut into wedges)

Instructions

  • Cut the paprika in half lengthwise, remove the stem and seeds, and cut into about 1 cm squares. Cut the onion into the same size. Remove the stem from the tomato and cut into 2 cm squares. 
  • Cut the chicken into bite-sized pieces and sprinkle with salt and pepper. Add olive oil and garlic to a frying pan and heat over medium heat. When the garlic aroma comes out, add onions and paprika and fry until tender.
  • Add chicken and fry until the surface turns whitish brown. Add the tomatoes and rice and fry over medium-low heat until the rice is translucent.
  • Add tomato ketchup, hot water and chicken stock cube.  Mix whole and bring to a boil.
    Add the powdered cheese, mix, cover, reduce heat, and cook over low heat for about 30 minutes or until the fluids are gone and rice becomes tender.
  • Place pizza cheese and cooked shrimps over the paella, cover until cheese melts. Sprinkle with parsley if you like, squeeze lemon and eat.

Notes

The cooking time will vary depending on the sort of rice and heat, so 30 minutes is just a guideline.
