Chopped vegetable sauce is a sauce based on Brazilian Molho vinagrete. This Molho vinagrete sauce is a combination of finely chopped vegetables, vinegar and oil.  It’s very refreshing and goes very well with meat.  Also, it goes well with fish dishes.

Although it is a sauce, you don’t need to cook. Just chop raw vegetables and mix with vinegar and oil.  So, you can enjoy a crispy texture and fresh taste of vegetables. It’s like eating meat and salad together.  At the time of BBQ, it is very good to make a lot and eat it with meat and fish. Below is a link to an article about vinaigrette, so please read it if you like.

Recipe Tips

It’s easy to make, but there are some points to pay attention to.

After chopping the onions into small pieces, soak them in water to remove the spiciness.  Change the water several times and leave it for about 20 minutes.

For tomatoes, remove the seeds and jelly-like parts and chop only the pulp.  After chopping tomatoes and bell peppers, sprinkle a little salt.  After leaving it for about 10 minutes, a lot of water will come out, so wrap it in a cloth and squeeze it out.   Similarly, squeeze the water out of the onions as well.  If you do not drain the water well here, the sauce will become watery.  I prefer tomatoes to be cut a bit large pieces and onions and paprika to be finely chopped.

You can eat it immediately after making it, but if you leave it in the refrigerator for about an hour, it will be more delicious.

You can make it with vinegar, but I like the combination of lemon juice and olive oil, so I usually make it with lemon juice.  It’s an unheated sauce, so it’s even more delicious with good quality olive oil.

Equipment

  • 1 Cloth for squeezing the water out of vegetables
  • 1 bowl

Ingredients

  • 300~400 gram Tomatoes
  • 100 gram Onion
  • 300 gram Bell peppers – yellow and green (remove calyx and seeds)
  • 2~3 tablespoon Olive oil
  • 1/2 Lemon (squeeze the juice) or 2 ~3 tablespoon of vinegar
  • 1/2~1 teaspoon Fine granulated sugar
  • A pinch of Salt
  • A pinch of Black pepper

Instructions

  • Finely chop the onion and soak them in water to remove the spiciness. Change the water several times and leave it for about 20 minutes.
  • Regarding tomatoes, remove the seeds and jelly-like parts and chop only the pulp.  Finely chop the bell peppers as well. Sprinkle a small amount of salt on chopped tomatoes and bell peppers and leave for about 10 minutes.
  • A lot of water will come out, so wrap it in a cloth and squeeze it out.   After squeezing, transfer the tomatoes and bell peppers to a bowl.
  • Similarly, use the same cloth which you used to squeeze tomatoes and bell peppers, and squeeze the water out of the onions.  Then put the onions in the bowl.
  • First add olive oil to the bowl and mix well.  Then add sugar and lemon juice and mix. Add a small amount of salt to taste. You can eat it immediately after making it, but if you leave it in the refrigerator for about an hour, it will be more delicious.  When eating, sprinkle with ground black pepper if you like.

Notes

You can use vinegar instead of lemon juice.
