This post is about Japanese hamburger steak. As you can imagine hamburger steak is very poplular in many countries, it is also quite popular in Japan.  You can enjoy it both at home and at Yōshoku (Japanese style Western food) restaurants. Yōshoku is very unique. It is a Japanese-style arrangement of famous Western dishes. I’ll put a link about Yōshoku below, so please read it if you like.

In fact Japanese hamburger steak is quite similar to Salisbury steak. It contains more ingredients such as breadcrumbs, onions and egg etc., while usual hamburger patty contains only seasonings.  The characteristic of Japanese hamburger steak is that it is soft and juicy.  This is due to the addition of many binders such as chopped onions and bread crumbs. 

There are actually numerous variations because there is plenty of room for ingenuity in the cooking process. It is possible to vary the seasoning, the type of meat (beef, pork, chicken), the degree of grinding, the ingredients to be mixed. In Japan, in addition to common sauce such as tomato sauce and demiglace sauce, Japanese style sauce (teriyaki sauce, grated radish and soy sauce-based sauce) are also popular.

In this post, I’ll show you one of our family favorite recipes, the rich and creamy hamburger steak.  I’ve been making this for years and I still think it’s delicious whenever I eat it.

Recipe tips

In Japan people often use ground meat, which is a mixture of beef and pork, and I think this recipe goes well with ground beef, so I recommend to use ground beef. 

When the hamburger is browned, add water and soup stock cube, cover it and steam. Then, quite a lot of scum and foam will come out. So, after putting the hamburger steak on a plate, strain the remaining sauce and add fresh cream to make a smooth sauce.  The finish will be much better with the effort of straining the sauce.

Equipment

  • Frying pan with a lid

Ingredients

  • 500 gram Ground beef
  • 150 gram 1 small onion (finely chopped)
  • 2~3 tablespoon Powdered cheese
  • 4~5 tablespoon Bread crumbs
  • 1 Egg
  • a pinch of Salt & pepper
  • 1 tablespoon Vegetable oil
  • 1 cube Beef soup stock cube
  • 100 ml Water
  • 100~120 ml Fresh cream
  • 1 teaspoon Cornstarch (optional)
  • 1 teaspoon Water to dissolve cornstarch (optional)
  • A little amount of Finely chopped chive / parsley (optional)

Instructions

  • Put ground beef, onions, grated cheese, bread crumbs and eggs in a bowl and add salt and pepper. Mix the ingredients well.  When the whole is mixed, stir it in a circular motion to help holding the meat together.(If it's very soft, add some more breadcrumbs.)
  • Roughly divide the meat into the number you want to make in the bowl, pick it up and make it lightly oval. Smooth the surface and lightly throw from one hand to the other to remove air. Put oil in a frying pan, heat it, add hamburger steak, and fry on medium high heat until both sides are browned. If you get a lot of fat, wipe it off with a paper towel.  
  • Add water and soup cubes, dissolve, cover with a lid and steam over medium heat for 15-20 minutes. After 15-20 minutes, the water should be reduced by half. if the water is almost gone, add a little.
  • When the hamburger steak is cooked, remove it to a plate, strain the remaining fluid and put it back in the frying pan.  
  • Add fresh cream and simmer a little. check the taste, if necessary, add salt and pepper to taste. If you want to thicken the sauce, add cornstarch dissolved in water.  
  • Pour the sauce on the hamburger steak and sprinkle with chives and parsley, if any.  Serve with potatoes and vegetables if you like.

Notes

Please adjust the amount of soup stock cubes as the amount of salt varies depending on the product.
The Cooking time is only for hamburger steak, not included cooking time for other potatoes and vegetables.
