Today I will show you Japanese minced meat sauce recipe, which is very versatile and goes with vegetables very well.  I found the original recipe many years ago from the cook book of famous Japanese cookery writer. My family liked this sauce and I cooked it many times the past years and adjusted to our own liking.

Easy to make, cleans up your fridge and is friendly to your wallet

The sauce is very easy to make and can be kept in the fridge for a couple of days.  But we eat it all within 2 days. The first day with roasted or deep-fried vegetables, and the second day with fresh vegetables as a side dish.  The sauce can be used not only for vegetables but also for noodles as well.  

The great thing about this recipe is that you can clear out the fridge with the vegetables you may have on hand. Minced meat is not usually expensive, hence this recipe is friendly to your wallet as well.

The vegetables I often use are following. However, you can use anything you like. For oven baking or deep-frying :  paprika, green beans, pumpkin, carrots, broccoli, cauliflower, aubergine etc.  For fresh use : tomato, onion, cucumber, radish, lettuce etc.

Ingredients

  • 500 g Minced meat Beef, Pork or Mixed
  • 3-4 cloves Garlic
  • 1/2 cup Soy sauce
  • 1/2 cup Vineger
  • Pepper to taste
  • 1 tbl spoon corn starch (optional)
  • 1 tbl spoon water (optional)

Instructions

  • Heat oil in a frying pan over high heat. Add minced meat and continue to cook over a medium heat.
  • During cooking process, lots of fat and liquid come out.  Use some kitchen paper in the pan and let the kitchen paper absorb the excess fat and liquid.
  • Continue to fry until the meat is well browned. 
  • Add crashed or finely chopped garlic, soy sauce, vinegar and pepper.  Cook a couple of minutes.
  • If you like, you can add cornstarch and water mixture to thicken the sauce. In this case take the pan out from heat and add starch and water mixture and mix well, then put back on the heat and cook further until the sauce is thickened.

Serve the Japanese minced meat sauce with roasted, deep-fried, fresh vegetables or a combination of these.  Rice goes well with this recipe, but also pasta and noodles go well. Regarding how to cook rice, please click below button.

Ingredients

  • Vegetables of your choice
  • oil
  • salt & pepper

Instructions

  • Preheat oven at 180 degrees Celsius.
  • Prepare vegetables (wash, peel, chop vegetables: cut vegetables into pieces about the same size.)
  • Put cut vegetables in a plastic bag and add some oils. Toss or shake the vegetables gently in a plastic bag in order to coat vegetables with oil.
  • Spread the vegetables across baking sheet and season with salt & pepper. Roast for 15-20 minutes. Check if the vegetables are tender and if not tender enough, roast further 5-10 minutes and check again.
