As the name suggests walnut cookie with caramelised outside is a cookie with crispy inside and crunchy brown caramel outside. This is one of my favorite cookies.  Before baking, coat the cookie dough with beaten egg and granulated sugar, then cut and bake. By doing this, the granulated sugar melts and spreads like a lace, which is crunchy and very tasty.

It looks simple and rustic, but it is very delicious. I’ve been making it for years, but I never get tired of it and still make it regularly.  Since I love walnuts, I use walnuts, but it’s also delicious to make it with other nuts in the same way.

Here, I would like to write notes and hints for making the cookies delicious.

Start by roasting walnuts. You can roast them either in a frying pan or oven.   If you use a frying pan, roast over medium heat for 2 to 5 minutes or until they smell nice and crispy.  If you use oven, roast at 175C -350F for 7 – 10 minutes. I usually use a frying pan for this.  This will definitely improve the aroma of the baked cookies. Therefore, I recommend you to do it.

After making the dough, shape it into a round bar and wrap it in cling film. Then, cool it in the fridge for 3 ~4 hours to harden it in order to cut it cleanly. If you don’t have time, you can chill it in the freezer for an hour instead. 

Before baking, the dough is coated with beaten egg and granulated sugar, which makes regular nut cookies many times more delicious. Therefore, please be sure to include this in the process.

This cookie spreads a little, so bake it side by side with an interspace of about 3 cm.

Equipment

Ingredients

  • 50 gram Walnuts
  • 90 gram Unsalted butter (room temperature)
  • 45 gram Fine granulated sugar
  • 125 gram All purpose flour (sifted)
  • A pinch of Salt
  • 1/2 Egg (beaten) for coating the dough
  • Appropriate amount of Granulated sugar for coating the dough

Instructions

  • Roast walnuts either in a frying pan or oven. If you use a frying pan, roast over medium heat, mixing with wooden spatula for 2 to 5 minutes or until they smell nice and crispy.  If you use oven, roast at 175C -350F for 7 – 10 minutes. Spread roasted walnuts on paper and when they cooled down chop them roughly.
  • Put butter and sugar in a bowl and mix with a hand mixer until the whole is creamy.
  • Add flour. Mix with a rubber spatula, being careful not to knead. (Mix until the flour blends in with the butter and not visible anymore.)
  • Add chopped walnuts and mix until the dough is united.
  • Divide the dough into two pieces and shape them into a round bar. Wrap them in plastic film and chill it in the refrigerator for 3-4 hours or in the freezer for 1 hour to make it easier to cut.
  • Preheat the oven to 180C = 356F degrees. Remove the chilled dough from the refrigerator or freezer, coat with beaten egg, and then coat with granulated sugar. 
  • Cut each round bar into 10 equal parts. (20 cookies in total). 
  • Arrange them 3 cm apart on a baking sheet lined with a parchment  paper. Bake in an oven at 180C=356F degrees for about 10 minutes, then lower to 170C=338F degrees and bake for another 8-10 minutes. Bake well until it becomes golden brown. The time is approximate. It depends on the oven, so check it after baking for about 15 minutes.  

Notes

The dough before coating with egg and granulated sugar can be stored in the freezer for about 3 weeks. Wrap it tightly with plastic film so that the odor is not transmitted. The dough coated with egg and sugar cannot be stored, hence bake them soon after coating.
